My kids have been asking for peanut butter cookies lately. So, I set out to find a way to make them as healthy as possible while still getting the “kid approved” stamp. I tried a few different recipes with different sugar substitutes (coconut sugar, honey, maple syrup) until I landed on the recipe below. I like the combo of maple syrup with peanut butter; it reminds me of the pretty fall days we’ve been having here in NC lately. I've also included a few reasons why I like using maple syrup from a health perspective in the "Nutrition Tips" section below. First, it is about three times sweeter than regular sugar, which means you could use less while still getting the same level of sweetness. Second, some research has suggested that using maple syrup as a substitute for traditional sweeteners (cane sugar) in moderation could improve health. This potential health benefit could be due to maple syrup having a higher nutritional value compared to many other sweeteners (table sugar, corn syrup, etc.). Maple syrup has many components that have health benefits, such as minerals (calcium, magnesium, iron, etc.), vitamins (thiamine, riboflavin, etc.), and phenolic compounds (anti-inflammatory compounds). Peach Cinnamon Muffins
I went to my daughter’s second grade “Meet the Teacher” event last night, which has me really feeling like summer is about over! Mixed emotions over here… I’ll miss pool days, beach trips, and more time with family, but man am I looking forward to fall colors, pumpkin-everything, and crisp air. I feel like peach+cinnamon is the perfect combo for my new muffin recipe to represent both the flavors of summer and fall in one treat. So, without further ado, let me introduce my “Peach Cinnamon Muffins”. These little lovelies are both healthy and tasty. They do not contain any sugar and are only sweetened with honey. Honey-Sweetened Chocolate Peanut Butter Cup Ice Cream
I’m back with another ice cream recipe, and this one is a good one: Honey-Sweetened Chocolate Peanut Butter Ice Cream (say that three times fast!). It basically tastes like a Reese’s cup, just not as sweet. I tend to like things that taste a little less sweet; the flavors stand out more to me, and I feel better after eating them. As an added bonus, it's kid tested and approved. Recipe tips: To start it is a simple recipe with only five ingredients, which I’m sure other moms of littles will appreciate! For the milk, I use Oatly Oat milk, Full-Fat, which is my favorite milk alternative. I’ve tried a bunch of milk alternatives, and this is the only one I’ve tried that rivals cow’s milk in terms of taste. You could use a different milk, but I’m not sure how it will change the taste. If you try a different type of milk in this recipe, I’d love to hear how it worked. For the peanut butter, I recommend using a peanut butter with only peanuts listed in the ingredients. A lot of peanut butters have added oils, sugars, and salt. I find that it still states great without these added ingredients and it is a little healthier. ...
Date-Sweetened Chocolate Ice Cream
I began dreaming about date-sweetened chocolate ice cream many months ago when one of my favorite bloggers, Shannon Pulsifer of Itsy Bitsy Indulgences, shared a photo of a delicious-looking cup of date-sweetened chocolate ice cream she bought at a place in California called the Pressed Juicery. My mouth started watering immediately (my embarrassing ice cream addiction strikes again...haha), and I wanted it! I love foods that are tasty, but don't make me feel bad. So, I quickly asked Google if there was a Pressed Juicery in my area, but unfortunately for me (maybe not for you!) they're mostly in California, Texas, and the Northeast. That's when I became determined to create a delicious date-sweetened chocolate ice cream at home using my Cuisinart Stainless-Steel Ice Cream Maker. I tried a few different recipes before I landed on the one I'm sharing here. It's chocolatey, creamy, and just the right sweetness. If you end up trying it, let me know what you think. I'm always looking to tweak recipes and make them yummier. Who knows...maybe one day when the kiddos are a bit older I'll look into opening a healthy ice cream shop in the Raleigh-area.
