Any other baked fruit fans out there? I, for one, have always been a big fan! I remember my mom being a bit perplexed when I requested apple cobbler over chocolate cake for many of my birthday parties growing up. Yup, I was THAT kid. haha
I still love cobbler, especially with a big scoop of ice cream. But as I got older, I stopped eating it as much because I didn’t like how some of the traditional cobblers made me feel after eating them. Recently, I decided that I wanted to come up with a cobbler that was a healthier version of the cobbler I loved as a kid. I wanted something that would not be too sweet and would make me feel good after eating it. That’s the inspiration for this recipe. It is made of honey, almonds, whole wheat flour, coconut oil, among other healthier ingredient options. So it’s pretty healthy, but also really tasty.
I recommend including a scoop of ice cream on top. I made a batch of my Almond Butter Ice Cream using our Cuisinart Stainless Steel Ice Cream Maker. I’m sure coconut ice cream would have been delicious as well. If you want to play it safe, vanilla is always a good choice. Apple Crisp
Ingredients
Apples
- 1.5 lbs Granny Smith apples (that's about 8 medium apples)
- 3 tsp lemon juice
- 1 tbsp honey
- 2 tsp tapioca
- 1/2 tbsp cinnamon
- 1 tbsp melted coconut oil
Crumbly topping
- 1/2 cup sliced almonds
- 1/2 cup whole wheat flour (I used sprouted grain)
- 1/4 cup honey
- 2 tsp cinnamon
- 1 tsp nutmeg
- 1/4 cup coconut oil
- 3/4 cup oatmeal (I used sprouted)
Instructions
- Set oven to 350 degrees.
- Peel and slice all apples and put them into a 8 x 8 baking pan.
- Mix lemon juice, honey, tapioca, cinnamon, and coconut oil in a small bowl and pour the mixture over the pan of apples. Ensure that the mixture coats the apples. I used my hands to spread it on all of the apples.
- Bake the apples in the oven for about 20 minutes, and then take it out of the oven.
- Add the almonds and flour to the food processor (or Vitamix) and pulse them together until pretty finely chopped. Then add the honey, cinnamon, nutmeg, and coconut oil. Pulse until well combined.
- Scoop your flour mixture into a bowl and add your oatmeal. Mix the oatmeal in using a spoon.
- Spread the crumbly topping over the apples.
- Bake for an additional 20-25 minutes until the top is golden brown.
- Scoop into serving dishes and add some ice cream if you’d like. Enjoy!
