I went to my daughter’s second grade “Meet the Teacher” event last night, which has me really feeling like summer is about over! Mixed emotions over here… I’ll miss pool days, beach trips, and more time with family, but man am I looking forward to fall colors, pumpkin-everything, and crisp air. I feel like peach+cinnamon is the perfect combo for my new muffin recipe to represent both the flavors of summer and fall in one treat. So, without further ado, let me introduce my “Peach Cinnamon Muffins”. These little lovelies are both healthy and tasty. They do not contain any sugar and are only sweetened with honey. As evidence of their tastiness, my oldest daughter finished her muffin first today and was basically begging her little sister for some of her muffin. My husband, Colin, said “okay, that means this recipe is good to post!”. So here you go…enjoy!
Peach Cinnamon Muffins
Equipment
- High speed blender (Vitamix, etc.)
Ingredients
Peaches mixture
- 2 large peaches
- 1 tbsp coconut oil
- 1 tsp cinnamon
Dry ingredients
- 1 cup oats recommend sprouted oats, if possible
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
Wet ingredients
- 1/3 cup coconut oil melted
- 1/2 cup honey
- 1 1/2 tsp vanilla extract
- 1 1/2 cups milk (almond, etc)
Instructions
- Heat oven to 425 degrees Fahrenheit
- Grease a muffin pan with oil (coconut or avocado oil are recommended).
- Mix oats in high speed blender (e.g., Vitamix) until crushed.
- Mix all dry ingredients (including the oats mixture from the step above) in a medium to large size bowl.
- Mix the wet ingredients in a medium to large size bowl.
- Add dry ingredients into the wet ingredients and mix just until combined.
- Scoop into muffin pan.
- Cook for 8-10 minutes.
- Enjoy!
